Is this a disorder? Not inherently. It becomes one when it is the only available tool and the toolbox is locked. See also: avoidance, alexithymia.
Why carbohydrates specifically? They promote serotonin synthesis. The body is not being irrational. It is being very rational about the wrong problem.
Can it be fixed? "Fixed" is not the right word. The underlying emotion needs somewhere else to go. That part is harder than it sounds and takes longer than expected.
What is the actual need? Varies. Usually one of: comfort, stimulation, distraction, connection, or a few uninterrupted minutes where nothing is being asked of you.
This pattern will not be deprecated unilaterally. It will wind down gradually as its dependencies, specifically unmetabolized stress and insufficient alternative coping routes, are reduced. There is no patch. There is only slower, gentler rerouting.
